Paneer Curry Recipe
Ingredients:
- 250 grams paneer, cubed
- 2 tablespoons oil or ghee
- 1 large onion, finely chopped
- 2 large tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 2 green chillies, slit (optional)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon garam masala powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 cup fresh cream or yoghurt
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Prepare the Paneer:
- If you prefer, lightly fry the paneer cubes in a little oil until they are golden brown. This step is optional but adds a nice texture to the paneer. Set the fried paneer aside.
- Cook the Onions and Spices:
- Heat oil or ghee in a large pan over medium heat.
- Add the cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and green chillies (if using). Sauté for another 2-3 minutes until the raw smell goes away.
- Add Tomatoes and Spices:
- Add the tomato puree to the pan and cook until the oil separates from the mixture.
- Add turmeric powder, red chilli powder, coriander powder, and cumin powder. Stir well and cook for a couple of minutes until the spices are well incorporated.
- Create the Gravy:
- Add the fresh cream or yoghurt to the pan and mix well. Cook for 2-3 minutes, stirring continuously to prevent the cream from curdling.
- If the gravy is too thick, you can add a little water to adjust the consistency.
- Add the Paneer:
- Add the paneer cubes to the gravy and stir gently to coat them with the sauce.
- Let the paneer simmer in the gravy for about 5-7 minutes, allowing the flavours to meld together.
- Finish and Serve:
- Add garam masala powder and salt to taste. Mix well.
- Garnish with fresh coriander leaves.
